Creamy Cabbage Slaw with Buttermilk Ranch Dressing

Everyone needs more side dish recipes for preparing all year ’round, and this Creamy Cabbage Slaw with Buttermilk Dressing is definitely a keeper. The crunchiness of the slaw, paired with the toasted cumin buttermilk ranch dressing, and roasted potatoes, is perfectly paired alongside everything from sandwiches to salmon.

  • 1 head cabbage, shredded
  • 1/2 red onion, thinly sliced
  • 1 bunch cilantro leaves, chopped
  • 4 Fresno chiles, stemmed, seeded and sliced
  • 1 Tbsp salt
  • 1-1/2 tsp pepper
  • 10 small heirloom potatoes, sliced and roasted
  • 1 cup fontina cheese, grated

Combine all ingredients, except cheese and dress with toasted cumin buttermilk ranch dressing (below). Let sit for 2 hours, then add cheese and serve.

Toasted Cumin Buttermilk Ranch Dressing

  • 1 cup buttermilk
  • 1/2 cup mayonnaise
  • 3 Tbsp chopped cilantro
  • 1 Tbsp chopped chives
  • 1 Tbsp chopped parsley
  • 1-1/2 tsp salt
  • 1-1/2 tsp pepper
  • 1 tsp lemon juice
  • 1 tsp toasted cumin
  • 1/2 tsp chili flakes

Whisk together all ingredients.
