White Chocolate Cranberry Energy Bites

These energy bites are a popular after-school or before-sports choice for my kids. They are an easy way to get some energy into the kids, when all they want are empty calories!
  • 1-1/4 cups rolled oats
  • 2 Tbsp mix-ins (chia, flax or hemp seeds, for example – or additional 2 Tbsp rolled oats)
  • ½ cup nut butter
  • ½ cup honey, maple syrup or agave
  • 1 tsp vanilla
  • 1/2 cup small white chocolate chips
  • 1/2 cup dried cranberries
Add all ingredients to a bowl, in the order listed. Mix thoroughly.
Using your hands or small scoop, form into balls and place on a pan lined with parchment paper.
Place in refrigerator for about 2 hours. (They may be a bit sticky.)
Store in fridge until they’re gone!
