Pretzel Bites

These homemade soft pretzel bites are perfect for dipping in a cheese sauce. If you’d like a crunchier texture, lower the baking temperature to 375-400 degrees F, and bake approximately 20 minutes longer. For this crispier version, keep an eye on the first batch, so you can adjust temperature and baking time to your liking.

  • 2 cups warm water
  • 1 Tbsp sugar
  • 1-1/2 Tbsp dry active yeast
  • 1/2 cup unsalted butter, melted
  • 1 Tbsp salt, plus more for sprinkling on tops
  • 6 cups all-purpose flour
  • 1 cup baking soda
  • 4 egg yolks whisked with 3 Tbsp water

In a bowl, add water and sugar, then sprinkle in the yeast. Let it sit until it begins to foam, about 5 minutes.

Pour in the butter, salt and flour, mix until combined, then knead the dough for 5 minutes.

Place dough in a bowl that has been lightly covered with vegetable oil. Cover with a bowl and allow it to rest until it doubles in sized, about 1 hour.

When dough is ready add one cup of baking soda to one gallon of water to a pot and bring to a boil. Preheat oven to 450 degrees F.

Meanwhile, cut a piece of the dough and roll it out until it is between 18-24″ long. Cut it into bite sized pieces. Do this for remaining dough.

Once water has boiled, turn it down to a simmer. Cook 5-7 pretzel bites at a time (don’t overcrowd) for about 30 seconds. Remove from water and place on a baking sheet lines with a silicone mat.

Brush tops of each with the egg wash, and season with salt.

Bake in the oven for 12-15 minutes, or until the bites are golden brown.
