Homemade Dulce de Leche

Having lived in Miami for a dozen years, and also traveling to Latin America for work, I became acquainted with Dulce de Leche along the way. I typically purchase a jar if I’m desiring a bit on my ice cream, but this time around, when making Alfajores, I decided to make some on my own. This version is quite simple, and requires an electric pressure cooker, and nets delicious results.

  • 1 can condensed milk
  • 1 tsp vanilla

Open can of condensed milk, then wrap the can (and open top) with foil.

Place a rack in the bottom of the pressure cooker and fill with 8-10 cups of water. You’ll need to adjust amount once can is in the pot.

Place can of condensed milk in the center of the rack, and ensure water comes halfway up the sides of the can, adjusting amount of water as necessary.

Lock the lids and set the unit to cook on high for 35 minutes. 

After the cycle is complete, perform a quick release of steam. Carefully remove foil-covered can and transfer contents to a boil

Whisk in vanilla until smooth. Serve warm or room temperature, according to your needs.
