Easy Coconut Shrimp

Easy to make, quick to prepare, and delicious to eat. Try this Easy Coconut Shrimp recipe for a weeknight meal, or at a party. 

  • 1/3 cup of flour
  • ½ tsp salt
  • ½ tsp pepper
  • 2 eggs, beaten
  • ¾ cups panko
  • 1 cup coconut
  • 1 lb. raw, large shrimp – peeled, deveined, tails attached
  • Vegetable oil, or preferred oil, for frying

Mix flour, salt and pepper in one bowl. 

Beat eggs in another bowl.

In the third bowl, combine panko and coconut.

Dip shrimp in flour bowl, then eggs, then panko bowl. 

Heat oil in a large skillet on medium heat. Fry shrimp in batches, without crowding the pan. Once crispy and golden brown on one side (2-3minutes), flip over and cook until golden brown.

Place fried shrimp on a plate lined with a paper towel until transferring to serving plate.

Serve with your favorite dipping sauce.
