These flavorful cookies are addictive. Featuring a trio of spices — cinnamon, nutmeg and ginger – and a crisp bite, they disappear faster then I can make them.
- 3/4 cups flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp each – cinnamon, nutmeg, ginger
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1/2 tsp vanilla
- 1-1/2 cups quick-cooking oats
- 1/2 cup chopped walnuts
- 1/2 cup chopped raisins (or use all walnuts)
- 2 Tbsp sugar and 1/4 tsp cinnamon for topping
Mix together flour, baking soda, salt and spices.
Beat butter and sugars together in a bowl until fluffy.
Add egg and vanilla, then beat until incorporated.
Gradually stir in flour mixture, until blended, then add the oats, walnuts and raisins.
Drop rounded teaspoons of dough 2-1/2 inches apart onto a lightly greased cookie sheet. Flatten each cookie with the bottom of a glass that has been buttered and dipped into a mixture of 2 tablespoons sugar mixed with 1/4 tsp cinnamon.
Bake at 350 degrees F for 8-10 minutes. Remove to wire rack to cool
