Mrs. Van’s Peanut Butter Squares


Mrs. Van, our elementary school principal, provided us with this delicious recipe for a classroom cookbook project. This was the first recipe in the book my kids asked us to make. It has since become a family favorite, and definitely a favorite of anyone we make this for — thanks, Mrs. Van!

 

  • 1 cup butter
  • 1 1/2 cups powdered sugar
  • 1 3/4 cups graham cracker crumbs
  • 1 cup peanut butter
  • 2 cups chocolate chips

Melt butter and place in large bowl. Stir in sugar, graham cracker crumbs and peanut butter. Mix well.

Spoon mixture into a 13 X 9” pan and spread smooth.

Melt chocolate chips and cool slightly, then pour over peanut butter mixture in pan.

Cool partially, cut into 2-inch squares. When completely cooled, cut all the way through.

Refrigerate until ready to serve.
