Who doesn’t love quick and delicious recipes that require only a few ingredients? This one is definitely a keeper, and is great for a quick lunch, after school snack, or a refreshing dinner. My only suggestion is to double the recipe!
- 2 cups cherry tomatoes, halved
- 8 ounces fresh mozzarella, ciliegine, sliced in half (or quarters)
- 2 Tbsp parsley (or cilantro or basil)
- 3 Tbsp olive oil
- 1 Tbsp red wine vinegar
- 1 clove garlic, crushed
- black pepper
Clean tomatoes and prepare; slice mozzarella to desired size.
In a medium-sized bowl, whisk together olive oil, red wine vinegar, garlic and black pepper.
Add tomatoes and mozzarella and mix to coat. Add parsley, and season with more black pepper if desired.
