The Classic Fettuccine Alfredo

This simple and classic dish features a smooth and rich sauce which coats the pasta, and is an essential recipe to have in your repertoire.  Perfect for special occasions or weeknight meals, it often appears on our table when we don’t have much in the cupboards. With a handful of ingredients, this is truly an indulgent meal that always gets the thumbs up from our family.

  • 2 Tbsp salt
  • 1-1/2 lbs fresh fettuccine, or 1 lb dried
  • 8 Tbsp butter
  • 1 cup heavy cream
  • 1 cup Parmigiano Reggiano, grated
  • salt and freshly ground pepper, to taste

Add 2 Tbsp salt to 6 quarts of boiling water, and cook pasta until al dente.

Melt butter in a large saucepan, then add drained pasta, cream and parmesan.

Toss over low heat until pasta is covered.

Season to taste.
